Accommodations consist of 16 beautifully renovated cabins, built with natural wood accents, tiled bathrooms, and options for one or two bedrooms, many featuring bunk beds for children. Dining at Greenhorn Ranch is a communal experience. Meals are served in a central dining hall, with buffet-style offerings that include hearty American breakfasts — think eggs, bacon, fresh fruit, oatmeal, and specialty coffees. Lunch dishes highlight healthful salads, such as Caesar, Southwest with black beans, and the Chef’s signature arugula salad topped with candied walnuts and goat cheese, all drizzled with lemon-basil dressing. Dinner options often feature mushroom ravioli, salmon with pesto served alongside baked cauliflower, and an array of meat choices like chicken or beef, accompanied by rice or potatoes.
